Cheesy White Asparagus Tart

This tart is absolutely delicious! A must try during the white asparagus season.

Method :

  1. Boil the peeled asparagus for 3-5 minutes to soften just a bit

  2. Score the edges of the dough to create a frame

  3. Brush the “frame” with egg wash (egg & water) and sprinkle some sesame seeds

  4. Mix the remaining of the egg with the cheese (mozarella and ricotta) and half of the lemon zest

  5. Spread the cheese mixture over the dough , up to the frame

  6. Top it with thin slices of green onion, smoked salmon, white asparagus and add it in the preheated oven at 200 degrees for 20-25 minutes (until brown)

  7. Cut into slices and enjoy. Is super tasty both warm and cold. You may top if with some extra fresh ricotta with lemon zest.
