Green Veggies Tart with Ricotta

Your new favorite summer tart : green, fresh, tasty and beautiful!

Ingredients :

  1. Preheat the oven the 200C (fan).
  2. Transfer the pastry to a baking tray lined with parchment paper and using a table fork make small holes.
  3. In a pot with boiling water and a pinch of salt, boil for 4 minutes the asparagus, peas, beans and broccolini.
  4. In a bowl mix together the egg, ricotta, tiny sliced thyme leaves, dille and green spring onion and set aside.
  5. Spread the ricotta filling evenly over the pastry and top it with the green boiled veggies - let your creativity fly :) Add few “roses/rolls” from the slices of raw courgette and add the tray in the preheated oven for 15 minutes.
  6. Once baked, let the tart rest for few minutes before serving.
  7. Grate some lemon zest, then slice it and enjoy :) I like it at room temperature.
