Stuffed Avocado with Shrimps, Mango and Tomatoes

Method :

  1. Cut each avocado in half lengthways, remove the pits and scoop out the flesh without breaking the skin. Then set aside.
  2. Cut the avocado, mango and tomatoes in small cubes and mix them easily together with the shrimps.
  3. Prepare the dressing by mixing all the above mentioned ingredients together.
  4. Add the dressing on top of the shrimps and the rest of the ingredients and let them marinate in the fridge for minimum 10 minutes.
  5. Add the shrimp mixture in each skin of avocado (prepared at step 1), garnish with some chilli flakes or coriander and serve.
